Default head and cam work

I have a 2000 Road King. It has a stage 1 kit and Sampson rolled thunder pipes. The bike runs fine but I would like to keep it road reliable but also have some guts in it when I want to pass something. I really enjoy reading the tech info that Donny Pederson puts out there. I need help indeciding what set up to go with.I want to do heads and a gear drive cam. Should I have the stock heads reworked or just buy off the shelf. Also what cam "lift" do I need. As I stated, I'm more interested in a bike I know will get me around rather one that is fast! I also have a power commander that I havn't put on yet. I live in the Central Ohio area, does anyone know of a trustworthy shop that I can turn my bike over to do the job right?
