Default XLS 1200S & S+S shorty E jetting...Help

I have a 2001 XLS 1200S with factory installed hot cams, dual plug heads, and single fire ignition, all stock OEM. It ran well but, I thought I could get more with an S+S, so I replaced the stock CV carb and air cleaner with an S+S shorty E set up. I do get more but I can't get it jetted right. I am running a .0295 low speed jet and a .070 high speed. If I open full throttle it wants to snap and backfire through the exhaust in any gear, at any speed. If I run an .068 it pops, snorts and coughs through the carb indicating a lean mix. With the .068 jet, if I open the enrichener/choke an 1/8 to 1/4 inch it runs perfect and the strongest yet with tons of pulling power. There is no .069 size jet. Will I hurt anything having the enrichener on slightly all the time ??? Any sugestions ???

I sprayed starting fluid on and around the intake manifold and the engine did not race or increase rpm's indicating there is no intake leak.

Default Shorty E jets

Are you doing spark plug readings? The color of the plug wil tell you whether you are too lean or to rich. If you need to pull the enrichner out you have to be too lean.
